Whole Grain Banana Flax Waffles

Waffles are a breakfast favourite at my house. I’ve been on a quest to find the perfect waffle recipe. It had to be crispy, golden, fluffy, flavourful, and of course, filled with nutritious ingredients. Don’t get me wrong – I don’t mind an indulgent breakfast from time to time, but since we eat waffles at least once a week, I want them to nourish my kiddos.  After trying dozens of different recipes, I decided to figure out my own. 

Along the way, I had some duds. Some were dry and mealy, others were too soft. But I’m glad I stuck it out. This one checks all of the boxes. 

It’s made with all wholegrain flour, with added flaxseed for a boost of omega-3s and soluble fibre to keep you feeling full and to keep your cholesterol in check. It’s not overly sweet but has great flavour, even if you prefer not to add maple syrup. And it has the best texture of any wholegrain waffle I’ve ever tasted. Fluffy and soft on the inside, light and crispy on the outside. And it’s all made in one bowl – no beating of egg whites required.

You could definitely add blueberries (or maybe even some chocolate chips!) to the batter; I prefer to serve it topped with fresh fruit or warmed frozen berries.

Whole Grain Banana Flax Waffles

Servings: 6

Ingredients:

1 banana, mashed
2 eggs (preferably omega-3)
1 ¾ cup milk (I used unsweetened cashew)
¼ cup canola or avocado oil
1 teaspoon vanilla extract
1 ¼ cups whole wheat flour
½ cup ground flaxseed
4 teaspoons baking powder
1 tablespoon brown sugar
¼ teaspoon salt

Directions:

  1. Preheat waffle iron, and coat with cooking spray if needed. Mine is non-stick and doesn’t need to be coated.
  2. In a large bowl (or in the bowl of your stand mixer), mash banana. Whisk in eggs, milk, oil and vanilla.
  3. Beat in whole wheat flour, ground flax seed, baking powder, brown sugar and salt until batter is smooth.
  4. Pour batter into waffle iron in batches, cooking until it stops steaming and waffle is crisp and golden brown.
  5. Serve warm, topped with berries, maple syrup, or your favourite fruit. Leftovers reheat well in a toaster!
